Arabian Stew Crockpot Recipe
Here’s a crockpot recipe that you & your family will love – with an exotic flavour.
500g (or approx 1 lb) chicken mince (the leaner the better)
500g (or approx 1 lb) green beans
500g (or approx 1 lb) mushrooms, sliced
4 stalks celery, sliced
4 cups tomato juice
4 cloves garlic, crushed or minced
3 large potatoes, diced
1 large eggplant/ aubergine, peeled & diced
1 large onion, diced
1 tablespoon oregano, dried & crushed
1 teaspoon salt
Parmesan cheese, grated, to serve (optional)
sultanas, to serve (optional)
Into your crockpot, combine all the ingredients except the Parmesan.
Set your crockpot to ‘medium’ and cook for 9 hours.
Serve the Arabian stew over light & fluffy cous-cous, then sprinkle Parmesan cheese and sultanas on top.
