Sweet and Sour Prawn Crockpot

Sweet and Sour Prawn Crockpot Ingredients

500g (or approx 1 lb) shrimp/ prawns (fresh is best but frozen is fine), de-veined
500g (or approx 1 lb) pineapple pieces (fresh is best but tinned & drained is fine)
150g (or approx 6 oz) Chinese peas (fresh is best but frozen is fine)
3 tablespoons brown sugar
2 tablespoons cornstarch/ cornflour
2 tablespoons cider vinegar
2 tablespoons soy sauce
1 cup chicken stock
¾ cup pineapple or orange juice
½ teaspoon ginger, minced (fresh is best)

Sweet and Sour Prawn Crockpot Directions

In a saucepan on the stove, combine the sugar, cornflour/ cornstarch, minced ginger, soy sauce, chicken stock and pineapple or orange juice.
Stir continuously for approx 2 mins, during which time the mixture should boil, thicken and become semi-transparent.
Place Chinese peas, pineapple and sweet'n'sour mixture from saucepan into the bottom of your crockpot.
Set your crockpot to 'low heat' and cook for 3 hours.
Add the shrimp/ prawns and continue cooking on 'low heat' for 1.5 more hours.
Pour in cider vinegar and stir through.
Serve over steamed rice.

Serves: 6.
